You must have different client id on every esp for it to work.

c = MQTTClient("umqtt_client", server) on your SUB
Chance "umqtt_client" to somewhat different on one of your ESP.

It may depend from the terminal emulator. Picocom switches by default the modem control lined in a way that is seen by the esressif kind if bott loader enabling as reset. You can disable that with calling options I use GtkTerm to communicate with. The same is true when I supply the circuits from a ...

I have some ESP32 PICO and they always have a reset after power on, before I can communicate with them.
But my NODEMCU ESP8266 has no problems.

When it works from the terminal, try a little delay after your writing, so the eeprom has time to write.

On the picture is the orange wire and scl at one end and sda in the other.
With i2c, scl must be connected to scl and sda connected to sda.
In addition, pullup resistors are missing.

I haven't looked at it for a long time.
I put the code in: 'machine_i2c.c in /micropython/extmod'
But are you using pullup on SCL and SDA?

And the HTU21D was part of stretch goal, but I don't know of it is implementet yet?
