Got BETTER results now! I found where the issue was on the client side, not esp32 as thought. And kind of "duh" moment. The receive buffer was sized at 2048, but I needed to iterate over the array! Thanks to both of you, excellent replies and I will try both and let you know how the results turn out.
As for switching to the pyBoard, I may end up doing that if I am unable to obtain a more consistent and better result on this setup.
