Those solderless headers are interesting, I haven't seen them before. I think my problem right now is that I'm just having a hard time committing to one configuration, so I just need to pick one one and start using it. I may just have to get a few more Pyboards and try them all :-)

Those are not only quite useful but also very common in industrial environments (e.g. automotive the industry). It can be seen in a teardown video on Dave's EEVblog, where he handles a car airbag controller.

Just curious why the standard set of headers for sale only contains a single 8 pin?
